Five minutes before you cook

A small habit that makes following a recipe feel much easier.

The easiest way to feel more comfortable with a recipe is to give it a little attention before you begin. You do not need a perfectly arranged kitchen. You just need to know what is coming.

Read all the way to the end

Look for a surprise wait: chilling, soaking, rising, resting, or an ingredient that needs to soften. A recipe with 20 minutes of hands-on work might still need an hour before it is ready to serve. Check the whole timeline against when you want to eat.

Check what you actually have

Take out the ingredients and look at the quantities. Having a little rice is different from having enough rice. Check the equipment too, especially a specified pan size, a lid, a blender, or an oven-safe dish. Sort out a missing item before something is already cooking.

Do the busy bits first

Chop an onion before heating its pan. Measure the spices before a quick stir-fry. Keep ingredients separate if they go in at different times. You can use a plate or a few small bowls; this is about making the next step easy, not creating extra washing up.

Notice where your attention is needed

A fast sauce may need you nearby the whole time. A longer oven step might give you a chance to set the table. Find the moments when several things happen together and prepare for those first. Set a timer for a check, rather than relying on memory.

Keep the recipe within reach

Use a cooking view, a printout, or a clear spot for your phone. Mark off ingredients as you use them if that helps. There is no prize for remembering the next six steps. Let the recipe do some of that work for you.

One thing to remember

A few minutes of preparation can turn a hurried sequence into a series of manageable steps.
